Enjoy this easy slow cooker recipe, rich in spice and loads of flavor. Set it and forget it to enjoy for dinner. Portion leftovers for lunch or freeze for a quick nutritious meal when you don’t feel like cooking.

Ingredients

• 2 c. red lentils

• 4 c. sweet potatoes, peeled and cubed

• ¾ c. white onion, chopped

• 2 tsp garam masala

• 2 tsp turmeric

• 2 tsp fresh ginger, grated

• 3 tsp garlic, minced

• 3 tsp Thai red curry paste

• 6 oz. tomato paste

• 3 c. water

• 2 c. vegetable stock

• 1 c. coconut milk

• Garnish: Cilantro

 

Directions

1. Combine all ingredients in crockpot, except coconut milk.

2. Stir ingredients to combine.

3. Cook on low in crock pot for 6-8 hours.

4. When cooking is complete, stir in coconut milk.

5. Serve over grain of choice and garnish with cilantro.
