Protein-Packed Peanut Butter Donuts Recipe

Looking for a delicious snack that also packs a protein punch? This healthy donut recipe hits the spot with good-for-you fats and extra protein. And since they’re baked, they won’t leave you feeling sluggish and heavy. Pair them with some fruit for a balanced snack or enjoy them as part of your breakfast routine.

Donut Ingredients

– 1/2 cup unsweetened applesauce

– 4 Tbs. coconut oil

– 2 Tbs. peanut butter

– 1/2 tsp. vanilla extract

– 1/3 cup sugar

– 2 eggs

– 3/4 cup 1% milk (or milk alternative)

– 1 1/2 tsp. baking powder

– 1/4 tsp. baking soda

– 1/2 tsp. salt

– 1/2 cup Peanut Butter Puff flavored GNC AMP Sustained Protein Blend

– 1/4 cup powdered peanut butter

– 1 1/2 cups flour

Topping Ingredients

– 1/2 cup powdered sugar

– 1/4 cup powdered peanut butter

– 3 Tbs. water

– 1 Tbs. peanut butter

Directions

For the donuts:

Preheat oven to 425°F.

Spray a 12-well donut pan with cooking spray.

In a small bowl, whisk together applesauce, coconut oil, peanut butter, and vanilla extract. Add sugar and eggs and beat until combined. Stir in milk.

In a separate larger bowl, combine the remaining dry ingredients: salt, baking powder, baking soda, Peanut Butter Puff flavored GNC AMP Sustained Protein Blend, powdered peanut butter, and flour.

TIP: Use a powdered peanut butter with cocoa for extra flavor!

Pour the applesauce mixture into the bowl with dry ingredients and stir until just combined. The batter will be fairly thick.

Pour batter into the wells of a donut pan, filling until about 1/4” from the top.

TIP: Scrape batter into a resealable plastic bag—pressing out the air before closing—then cut a corner to pipe the batter more easily into the pan.

Bake for 10 minutes. Let the donuts rest in the pan for 3 to 5 minutes, then remove from the pan to cool on a cooling rack.

For the topping:

Heat the water and peanut butter in a small microwave-safe bowl for 10 to 20 seconds. Combine the powdered sugar and peanut butter powder in a different bowl, then whisk the warmed water into the sugar until all lumps are dissolved. Dip the top of each donut into the mixture and allow to dry on the cooling rack.

Store in an airtight container on the counter for 3 days, or up to a week in the refrigerator.
