Often referred to as Poor Man’s Tortilla Soup or Lazy Man’s Chicken Tortilla Soup, this easy chicken tortilla soup recipe will leave you craving its satisfying and spicy flavors. Like beef and bean chili, this recipe uses chicken breast as a lean protein source. With pantry staples like canned tomatoes, black beans, and corn. Nothing fancy, but chock full of protein, nutrients, fiber, and flavor!

Enjoy any time of year for lunch or dinner. Add a dash (or more) of Cajun seasoning to amplify the spice factor.

Ingredients

  • 1/4 cup vegetable oil
  • 1 small onion, diced
  • 1 green bell pepper sliced
  • 1 red bell pepper sliced
  • 2 tablespoons minced garlic
  • 3 cups chicken stock
  • 14.5oz can, diced tomatoes (or diced tomatoes with chili peppers, if you want it spicier)
  • 14.5oz can, black beans
  • 14.5oz can yellow corn
  • 3 chicken breasts diced
  • ¼ cup lemon juice
  • 1 tsp salt
  • 1 tsp pepper
  • ½ cup chopped cilantro
  • ¼ cup oregano
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1-2 tsp of Cajun seasoning
  • 1 tsp cumin
  • 1 tsp sugar

Directions

  1. Heat vegetable oil in a pot on high heat
  2. Pour onions into pot and sauté
  3. When onions are soft, add green peppers, garlic, and Cajun seasoning
  4. Sauté for another 10 minutes or until bell peppers are soft
  5. Add diced tomatoes, beans, and yellow corn and sauté for another 10 minutes
  6. Add chicken stock
  7. Mix diced chicken, salt, and pepper in a bowl then add it to the pot
  8. Add lemon juice, cilantro, oregano, chili powder, paprika, cumin, and sugar
  9. Lower it to medium and let the chicken cook
  10. Serve once chicken is cooked through
